Easy Ginger Dressing
I love the jarred ginger dressing in the produce section of my grocery store. It’s SO good, but there’s an insane amount of sodium in it. So, I decided to make my own dressing instead of eating the store-bought stuff and waking up with hot dog fingers the next morning.
This dressing is crazy easy – just peel carrots and ginger, and then dump everything in a powerful blender. It’s gorgeous and delicious.

Easy Ginger Dressing
Flavorful, gingery dressing is just a blender away.

Ingredients:
3 carrots, peeled and roughly chopped
1 small shallot, peeled and roughly chopped
1/4 c. peeled and roughly chopped fresh ginger
2 T. rice vinegar
2 T. miso paste
2 T. honey
1/2 c. olive oil (or other neutral tasting oil)*
1/2 c. water
splash of soy sauce
dash of pepper
Directions:
- Blend all ingredients in a powerful blender. Store in a mason jar in the fridge for up to a week or use on this awesome salad.
*If you want a nuttier flavor, substitute some of the olive oil for toasted sesame oil.
