We live in Florida, but every once in awhile, we wake up to a phenomenon that baffles my children: frost on the roofs across the street. It’s our equivalent of white-out blizzard conditions. healthy hot chocolate

On those cold mornings, I cozy up with my cup of home-roasted coffee (it’s my husband’s hobby, and I love it), but my kid needs something warm, too. That’s where this single serving hot chocolate comes in.

I know some people might think, “Hey, crazy lady. Swiss Miss makes single serving packets. Why don’t you use that?”

Let’s take a look at the ingredients: sugar, corn syrup, modified whey, cocoa, hydrogenated oil, nonfat milk, calcium carbonate, salt, dipotassium phosphate, mono- and diglycerides, artificial flavor.

Easy, simple hot chocolate for one with ingredients you can pronounce.


1/4 c. water

1 T sugar

1 T cocoa

1/4 t. cornstarch dissolved in a teaspoon of water

pinch salt

1/8 tsp. real vanilla extract

8 oz. milk


  1. In a saucepan over medium heat, warm the water and stir the sugar in until it dissolves.
  2. Whisk in the cocoa, cornstarch water, vanilla, and salt. Bring to a simmer until the mixture thickens and reduces slightly.
  3. Stir in the milk and cook until warmed through.
