This is the easiest bento box lunch I’ve thrown together yet. It’s a great way to use up leftovers for toppings, too! You can make your own dough, or do what I did and find some thick pita bread (or naan). Just look for some with as few ingredients as you can find – bread really only needs flour, yeast, salt, water, and maybe a little sugar.
Here are the tools you’ll need: a ghost shaped cookie cutter (or other cute shape), a couple of silicone cupcake liners, and a divided lunch box (I used one of my EasyLunchboxes – they’re really great and are very inexpensive).
For ingredients, you’ll need pita or naan to cut with your ghost cookie cutter, tomato sauce with a sprinkling of Italian herbs, freshly grated mozzarella, and some toppings – I used a few Applegate pepperoni slices, black olives, and some orange bell pepper, but use whatever leftover bits you have.
Here’s to a healthy, cute lunch that comes together in under 5 minutes!
