Honeydew Coconut Lime Pops

It’s about 4 million degrees here in Florida. I’m not exaggerating. It’s cook-eggs-on-pavement kind of hot, but my four year old still wants to play outside, blessherheart.

We needed a refreshing way to cool down, so I whipped up some of these popsicles in my Zoku Quick Pop Maker. They’re mostly honeydew melon, which makes a lovely creamy jade green color, with a splash of coconut milk and some lime for tang.

My mom was over and had one and couldn’t believe the great texture – they’re not icy and crunchy like you’d expect a fruit-based but dairy-free popsicle to be. They’re a perfect afternoon snack for a hot day.

Grab a honeydew melon and scoop out the fruit.

Toss it in a food processor and purée.

Add your coconut milk, lime, and honey. Purée and then pour into your popsicle molds.

Yield: about 1 3/4 c. fruit purée (about 6 Zoku popsicles)

Prep Time: a few minutes

Honeydew Coconut Lime Pops

Refreshing, creamy, and delicious.

Ingredients:

2 c. honeydew melon pieces (I use a melon baller for speed)

1/4 c. canned coconut milk

1 T. freshly squeezed lime juice

1 1/2 T. honey (or agave)

Directions:

Purée ingredients together and freeze according to the manufacturer's directions that came with your popsicle maker.
