Ingredients

1. Quesadilla (with Leftovers)

I made quesadillas for lunch on Sunday and made an extra for bento lunches. Cut into quarters , I got two meals (but it could even be spaced out over four, depending on your other sides and ages of your kids). Quesadillas are a really great way to use up some minced leftover vegetables and/or beans.

2. Pineapple Chunks

Buy and cut your own or just grab some pre-cut chunks at the produce section if you’re pressed for time.

3. Cherry Tomatoes and Bell Pepper Flowers

Toss in a few cherry tomatoes and bell pepper strips or baby carrots if you want to make things easier. Or make bell pepper cut outs with this simple tutorial (it only takes a minute or two more).

4. South of the Border Black Bean & Veggie Salad (or simple black beans)

This simple salad is easy to make and delicious. It keeps for days in the fridge, so you could double the batch and have lunches for a few people all week. If there just isn’t any time, you could easily substitute canned and rinsed black beans tossed with a bit of salsa.
