Gingerbread Snack Bites

My preschooler loves larabar-type snacks, so I thought I’d make some in a fun Christmas flavor: ginger and cinnamon for holiday spice, and molasses, which adds a touch of sweetness as well as iron and calcium.

These snack bites are nothing but healthy, and they’re very simple and quick to make. They’d make great snacks around the holidays, especially if you’re traveling.

Yield: about 18 snack balls

Total Time: just a few minutes

Gingerbread Snack Bites

Larabar-type snack bites that are perfect for Christmas!

Ingredients:

1 c. whole dates

1/2 c. rolled oats

1 c. almonds

1 T. blackstrap molasses

3/4 t. ginger

1/2 t. cinnamon

2 T. water (slightly more or less may be needed)

Directions:

1. Add all ingredients to your food processor and pulse until the mixture has a loose, sandy texture.

2. Add water as needed until a coarse paste consistency is reached.

3. Roll tablespoon sized balls and leave on the counter to firm up for an hour (or pop in the fridge for about 20 minutes).

These will keep in the refrigerator for about two weeks.
