Walnut and Cranberry Larabar Bites

I love homemade Larabars. They’re easy to make and store, my daughter thinks they’re a dessert, and they’re full of good ingredients. And – best of all – there’s no need to turn on the oven.

I have to credit my toddler with the flavor combo – she loves dried cranberries and walnuts, so it was only natural for us to combine them in this delicious snack.

If you’ve never made larabars, you’re in for a treat. They’re delicious and really easy to make.

Yield: about 12 balls

Prep Time: a few minutes

Cook Time: 15 minute rest time

Total Time: about 20 minutes

Walnut and Cranberry Larabar Bites


1 1/2 c. walnuts
8 pitted, whole dates
1/4 c. dried cranberries (check out the ingredient list - big brands are likely to contain GMO sugar/oil)
1/4 c. water


1. Combine walnuts, dates, and cranberries in your food processor and pulse until a thick paste is formed.
2. Add 1/4 c. water (more or less as needed) until the mixture clings together and is roll-able.
3. Roll into balls, drop on a cookie sheet, and pop into the fridge (or leave on the counter) to firm up for about 15 minutes.
