Peanut Butter and Honey Cookie Dough Bites
Growing up, I didn’t like to eat peanut butter and jelly sandwiches; I had my own sandwich of choice: peanut butter and honey. It’s an overlooked flavor combo that’s deliciously awesome and was the inspiration for these easy cookie dough bites. These are no-bake “cookies” that are full of good ingredients, but able to satisfy a sweet tooth.
And after all the Christmas and New Year’s treats, I must confess: I’ve developed a bit of a sweet tooth.
1 c. peanuts*
1 c. rolled oats
1/4 c. natural peanut butter**
3-4 T. raw honey (depending on how sweet you’d like)
1/4 c. water
*I used raw peanuts and toasted them for a few minutes in my skillet
**Avoid processed peanut butters that contain added oils and sugar. Peanut butter really only needs peanuts and a pinch of salt.
1. Blend peanuts, oats, peanut butter, and honey in your food processor.
2. Add water, pulsing until a thick, rollable paste consistency is reached. (You may need a tablespoon more or less).
3. Roll the “dough” into balls and drop them on a cookie sheet to firm up (either on the fridge or the counter for about 15 minutes).
4. Criss cross the top with a fork if you want a more traditional looking peanut butter cookie.
