Oatmeal Maple Walnut Cookie Bites

After Christmas parties, cookies, cinnamon rolls, and lots of other sweets, my husband and I decided to detox and give up added sugar – especially anything with refined cane sugar – for the month of January just to see how we felt after.

But I can’t go cold turkey, so I’m making the transition with healthier sugars like honey and maple syrup. These cookie bites are easy, delicious, and a huge win with my toddler. She would’ve devoured the whole batch if I let her. They’re no bake (who doesn’t love that?) and filled with wholesome ingredients.

Yield: about 15 cookie balls

Prep Time: a few minutes

Cook Time: 30 minutes (chill)

Total Time: about 40 minutes

Oatmeal Maple Walnut Cookie Bites

Easy, lightly-sweetned, no-bake cookie bites that are a guilt-free snack.

Ingredients:

1 1/2 c. walnuts
1 1/2 c. rolled oats
3 T. real maple syrup (NOT maple flavored pancake syrup)
4 pitted, whole dates
1/4 c. water

Directions:

1. Pulse the walnuts, oats, syrup, and dates in your food processor.
2. Add 3 T. water and blend. Add the remaining 1 T. if needed.
3. Scoop out dough balls, roll them into balls, and drop on a cookie sheet to harden for about 30 minutes (you can do this in the fridge or on the counter).
