Almond Joy Energy Bites
After chocolate and peanut butter, my favorite sweet combination might just be chocolate, almond, and coconut. So, it’s no surprise that I decided to make no-bake energy bites that feature those yummy flavors.
My daughter thinks these are cookies because they’re sweet and chocolatey, but there’s not a bit of refined sugar in them: the sweetness comes from dates. These taste too good to be true, but they’re a healthy snack that will satisfy a little sweet tooth, too.
Proof that this are a great option for kids: mine was hovering around the camera the whole time I was taking pictures, hoping I’d give her one of these. Here she is holding an almond on her nose. Because that’s the kind of thing she does.

Almond Joy No-Bake Energy Bites
Chocolate, almond, and coconut combine for a healthy Larabar-type energy bite!
1 1/2 c. raw almonds
12 whole dates
1/2 c. unsweetened coconut
1/3 c. water (plus more if needed)
1 T unsweetened cocoa (plus 1 t. if you want more chocolate flavor)
1. In a food processor, pulse the dates, almonds and coconut.
2. Add the cocoa and water and pulse until a thick paste is formed. Add a splash more water if you want a smoother consistency.
3. Stir in a handful of chocolate chips, if desired.
4. Roll into balls (I got about 24) and pop in the fridge for a few minutes or leave out on the counter to firm up.
